Bidfood Highlights Innovation as Foodservice Operators Adapt to Shifting Consumer Demand

Foodservice wholesaler Bidfood says innovation is becoming an increasingly important competitive tool for operators as they respond to evolving consumer preferences and persistent operational challenges.

The company argues that innovation across menus, products and day-to-day operations can help businesses meet changing customer expectations while addressing pressures on cost, labor and efficiency.

Consumer appetite for new dining experiences continues to grow. According to research cited by Bidfood, 58% of consumers consider innovation important when choosing food and venues, while 54% say they actively seek out new or distinctive cuisines and dishes. Separate research indicates that 50% of foodservice operators are prioritizing the introduction of new products, underscoring the industry’s effort to combine creativity with commercial viability and operational practicality.

Even as businesses pursue innovation, making it accessible remains a challenge. Bidfood said consumers are most attracted to new flavors and ingredients, though concerns over taste and price can limit adoption. As a result, successful innovation must be easy to understand, appealing to customers and practical for operators to implement.

The company showcased its approach during its recent Innovation in Motion event, where it presented developments spanning nutrition-focused menu design, hospitality solutions, experiential desserts and products from emerging small and medium-sized businesses. Sessions led by Bidfood’s Insights, Nutrition, Marketing and Chef Development teams explored the innovation process and how operators can apply new ideas in commercial kitchens.

Ahead of the UK government’s planned Healthy Food Standard, the event also examined how healthier food and drink products could be defined and how mandatory reporting requirements for large food businesses may develop. Bidfood’s Nutrition Team demonstrated practical ways chefs can incorporate more nutrient-dense whole foods, including beans, into their menus.

Bidfood also introduced Discovery Kitchen, a new hospitality range from Simply Food Solutions. Designed by Bidfood Culinary Director Martin Eshelby, the range draws inspiration from the company’s 2026 Food and Drink Trends as well as Eshelby’s travels across Europe and visits to restaurants across the UK. Developed in collaboration with Natural Innovations, Bold Bean Co and Tofoo & Co, the range is intended to support chefs working under time constraints or with limited experience. Products include Black Bean Birria and Malaysian Coconut Chicken Curry, both designed to be adapted into multiple menu formats, giving operators greater flexibility with minimal additional preparation.

With experiential dining continuing to gain traction—Bidfood said 62% of consumers are highly motivated by experiences—the event also featured an immersive dessert presentation illustrating how familiar desserts can be enhanced through texture, theatrical presentation and guest participation. Featured dishes included Coconut Lime and Sticky Rice served in a treasure box, Banana Bread Tiramisu and Basque Cheesecake finished with cherry-infused smoke.

The event also highlighted the latest suppliers participating in The Open Doors Programme, which supports businesses developing products with a focus on social value and healthcare catering. Among them was Half the Story, a social enterprise that supports people experiencing homelessness and others facing significant barriers to employment by creating jobs through its bakery while producing biscuits. Another participant, icesupp, presented what it describes as the world’s first nutritional food supplement designed to be frozen, although it can also be used as a coulis to fortify both sweet and savory dishes. The plant-based, allergen-free product provides 5g of protein, 5.5g of fiber and a blend of vitamins and minerals per serving.
