Crespel & Deiters Introduces Coating System Designed to Eliminate Frying Step

Crespel & Deiters Food has introduced Lory Crumb Non Fry, a breading system designed to produce crispy coated foods without deep frying, as food manufacturers seek ways to reduce fat content, improve production efficiency and meet growing demand for healthier convenience products.

The system is intended to deliver the crisp texture and golden-brown appearance typically associated with fried foods while eliminating the frying stage from the manufacturing process. By removing that step, manufacturers can reduce energy use, lower capital and maintenance costs, decrease oil consumption and streamline production, according to the company.

The launch comes as food producers face increasing pressure to improve the nutritional profile of prepared foods while maintaining taste and texture. Industry initiatives focused on calorie reduction, Nutri-Score ratings and more sustainable manufacturing have become increasingly important as consumers continue to seek healthier food options without sacrificing sensory quality.

Lory Crumb Non Fry uses extruded crumbs designed to create a uniform coating and consistent crispness. The formulation also produces a stable golden-brown appearance through a balanced particle size distribution and is designed to work with coloring foodstuffs rather than artificial colors.

The coating system incorporates Lory Starch Opal, a wheat starch batter developed to improve crumb adhesion while supporting crispness. Its cold-swelling properties enable stable batter systems without requiring additional ingredients. Depending on the application, manufacturers can incorporate additional processing steps, including dusting with Lory Starch Saphire Pure or multi-stage breading systems.

Beyond reducing energy consumption, eliminating the frying process can also reduce raw material usage and waste while lowering the production process’s carbon footprint. The company said the lower fat content of finished products could also contribute to improved Nutri-Score ratings.

The system is designed for both industrial food production and foodservice applications. Products coated with the system can be prepared in combi steamers, ovens or air fryers while maintaining crispness and appearance under heat-holding conditions. For consumers, the preparation process eliminates the need for deep frying and excess cooking oil.

Crespel & Deiters said the technology can be used across a range of applications, including chicken nuggets, schnitzels, fish fingers, vegetable and cheese snacks, as well as plant-based alternatives, allowing manufacturers to target both traditional meat products and the growing market for plant-based foods.
