The sweet potato from Peru is another root probably discovered by Christopher Columbus and his shipmates in the 15th century. Its consumption is quite similar to the “regular” potato but it is usually slightly more flavorful. The calorie count reaches 110 per 100g but this sweet potato also turns out to be an excellent source for vitamins A and C as well as potassium. The product is grown all year round and is harvested 4 to 6 months after sowing. We usually cook it by steaming to have it pureed or as a soup.
