Crespel & Deiters is expanding its role in the plant-based ingredients market with a focus on pea protein as a functional, texturized component in meat and fish alternatives.

As demand grows for products that replicate the texture and nutritional profile of animal-based foods, the company is positioning its Lory Tex Granules as a solution tailored to modern formulation requirements.

In the development of plant-based alternatives, wheat and pea protein have emerged as two of the most widely used inputs. Crespel & Deiters said its approach centers on refining these raw materials to deliver consistent functionality, emphasizing that the performance of plant-based proteins in finished products depends heavily on how they are processed.

The company’s Lory Tex Granules, a pea-based extrudate, are produced using extrusion technology refined over decades. Through controlled processing, the ingredient develops a slightly fibrous structure with defined properties, enabling more predictable performance in manufacturing. The company said this consistency can support shorter ingredient lists, an advantage for producers aiming to meet clean-label expectations.

The product is characterized by a light color and a near-neutral flavor profile, traits that can simplify seasoning and product development. Nutritionally, the granules deliver a protein content exceeding 65%, along with 5.6g of dietary fiber per 100g. Their high water-binding capacity allows manufacturers to achieve desired textures at lower inclusion rates, potentially improving efficiency in production.

Crespel & Deiters said the ingredient is suited for a range of applications, including plant-based meat and fish alternatives, hybrid products that combine animal and plant proteins, and snack or convenience formats where texture and nutritional balance are key considerations.

The introduction of pea-based ingredients reflects a broader expansion of the company’s portfolio beyond wheat. Crespel & Deiters said this development builds on decades of expertise in refining plant-based raw materials, extending its technical capabilities into new protein sources as the market for alternative proteins continues to evolve.
