Palsgaard offers a wide range of emulsifier and stabilizer blends custom designed for use in ice cream applications such as extruded ice creams, moulded ice cream, water ice and sorbets/sherbets.
“Achieving just the right mouth-feel, texture and body, melt-down properties and heat shock and storage stability in an ice cream requires a lot of knowledge of how to apply the right combination of emulsifiers and stabilizers – know-how we have acquired over the past 55 years of working with this in our application centers around the world – and which we happily share with our customers as we help them develop new products or optimize existing recipes. A service that will soon be covered locally in the Mena region as we expect to open our own ice cream application center in Dubai World Center in mid-2016,” according to company representatives.
