As the 2024 holiday season approaches, French fruit purée producer Les vergers Boiron has partnered with renowned British pastry chef Graham Mairs to unveil a uniquely decadent pairing that bridges the worlds of pastry and bar.
The collaboration results in an experience that tantalizes the senses while showcasing the excellence of Les vergers Boiron’s ambient and frozen fruit purées.
Defying the traditional bûche de Noël (Yule log), Chef Mairs has crafted a dessert recipe for pastry professionals that blends comforting notes of chestnut, pear, and quince, contrasted by the acidity of Corsican clementine.
The dessert features a chestnut dacquoise with a pear and quince confit, chestnut mousse, Corsican clementine jelly, and chestnut frosting. These components are topped by a Breton cake with almond and sweet chestnut, pear-shaped quenelles of chestnut mousse, and chestnut-filled chocolate balls.
To complement the dessert, Chef Mairs has designed a fruity and spicy cocktail evocative of a cozy December evening by the fire. The base is a spicy syrup infused with warm spices like pepper, cinnamon, clove, and star anise. It combines pineapple, mango, and coconut purées with spiced rum over a coconut ice snowball.
Before serving, a cinnamon stick and sprig of rosemary are lightly flamed and placed alongside the cocktail, along with a garnish of grated lime and nutmeg to further stimulate the senses.
With over 30 years of experience, Graham Mairs is renowned for his innovative approach. The chef studied at the prestigious École Lenôtre in Paris, where he was trained by some of France’s Meilleurs Ouvriers de France. His career has seen him work with iconic chefs like Paul Bocuse, Roger Vergé, and Pierre Hermé.
After establishing his own Michelin-starred restaurant in London, Mairs has now joined the “b fruit collective” of international ambassadors for Les vergers Boiron, alongside other culinary luminaries from across Europe.
This remarkable collaboration between pastry and bar professionals promises to elevate holiday indulgence with a delightful fusion of flavors and textures.
