Redefine Meat, a company known for developing premium plant-based meat alternatives, introduced the next generation of its flagship flank steak, aiming to push further into the fast-growing category of high-end meat substitutes.
The new version of its plant-based Redefine Flank Steak is designed to deliver a richer flavor, improved juiciness and a more steak-like texture, targeting meat eaters, vegetarians and vegans alike.
Based in Utrecht, Netherlands, the company has positioned itself as a pioneer in what it calls “new-meat,” a segment of premium 100% plant-based products intended to replicate the taste and experience of conventional meat. Redefine Meat said the updated steak will be available immediately to its existing network of food-service partners and retailers across Europe, as well as new customers, in both chilled and frozen formats.
The company first gained traction in upscale food-service channels with its original Redefine Flank Steak, which has appeared on menus at restaurants such as Hilton’s Bowery Restaurant in the Netherlands, Loetje in the Netherlands and The ASH in Germany. The latest iteration was developed in collaboration with chefs and meat specialists, whose feedback helped shape improvements in flavor, texture and juiciness.
According to the company, the updated product features a bolder, more beef-like flavor profile, deeper aroma and a more satisfying texture designed to mimic the mouthfeel of traditional steak. Executives say the product is intended to integrate easily into a wide variety of cuisines and cooking styles, reflecting the needs of professional kitchens as well as retail consumers.
Nutritionally, the steak contains 25 grams of protein per 100 grams and 4.4 grams of fiber per 100 grams. It is low in saturated fat, with 0.9 grams per 100 grams—about 66% less than a comparable beef steak—and contains no genetically modified organisms. The product is also cholesterol-free and contains no animal ingredients or by-products, positioning it as an option for consumers looking to reduce animal-meat consumption without sacrificing protein intake or the sensory qualities associated with steak.
The company has also updated the product’s packaging in an effort to improve sustainability. The new Redefine Flank Steak will be sold in a single thermoform pack, a design that the company says reduces plastic use by more than 60%.
