Givaudan Advances Natural Blue Food Color Toward European Approval

Givaudan has reached a significant regulatory milestone in Europe for its new natural blue food coloring, as the European Food Safety Authority (EFSA) issued a positive scientific opinion on the safety of blue galdieria extract for use as a food color additive.

The development marks an important step for the company’s Everzure Galdieria product, which is positioned as a natural alternative to the synthetic color Brilliant Blue FCF (E133). Following EFSA’s assessment, the product will move to the European Commission for final authorization.

Givaudan Sense Colour said EFSA’s evaluation confirmed the safety of blue galdieria extract, clearing a key regulatory hurdle for broader adoption in food and beverage applications across the European Union.

Everzure Galdieria is derived from Galdieria sulphuraria, a species of microalgae. The ingredient was developed in collaboration with the French biotechnology company Fermentalg and is produced through fermentation and extraction processes designed to deliver a vibrant blue hue similar to that of spirulina. Unlike spirulina-based colors, however, the new ingredient is stable in acidic environments, expanding the range of products in which manufacturers can use it.

The ingredient is produced using controlled fermentation of the microalgae Galdieria sulphuraria, followed by a water-based extraction process. The approach draws on Fermentalg’s experience in blue biotechnology and precision fermentation. According to the companies, the process is designed to ensure consistent quality while enabling scalable production and efficient use of resources.

If approved by the European Commission, the color could open new possibilities for food manufacturers seeking natural ingredients in products with lower pH levels. That includes categories such as beverages and confectionery, where achieving stable blue shades has historically proven difficult with existing natural colorants.

Everzure Galdieria has already been approved for use in the US and is currently available for sampling.
