Some of the latest flavor inclusions in ice cream products and frozen desserts have been inspired by innovative ingredients, one of which is cookie dough, according to inclusion specialist Pecan Deluxe Candy Europe.
Cafe-inspired flavors have increasingly appeared in both tub and hand-held ice creams globally over the last few years, evolving from simple flavors to specialty beverage styles including espresso and mocha – not to mention caramel which showed 31% growth, as a coffee drink flavor between 2010 and 2013. Desserts have also helped to influence ice cream trends with cheesecake pieces and doughs – desserts within desserts – becoming especially popular.
“Pecan Deluxe pioneered the use of cookie dough in ice cream, firstly in the USA but rapidly creating massive demand across the world. The beauty of cookie dough is its versatility and range of flavors. Premium ice cream producers are well known for their cookie dough tub variants – some of the leading lines across Europe and Asia – but cookie dough is also emerging as the ideal mouth-watering filler for hand-held cones, replacing the chocolate or other sauce in the base,” EMEA Managing Director Graham Kingston explained its continuing popularity.
A wide range of cookie dough flavors is available from Pecan Deluxe including its class-leading white chocolate and raspberry alongside traditional chocolate chip, classic and double chocolate variants. The company has also introduced highly innovative cheesecake pieces in both vanilla and lemon flavors – ideal for ice cream and frozen desserts alike -and new flavors are constantly being trialed and developed across these most popular inclusion ranges.
