Italian gelato ingredient producer Prodotti Rubicone has unveiled two new açai-flavored offerings designed to tap into growing global demand for functional, natural products with exotic appeal.
The company, which has been crafting ingredients for gelato and pastry since 1959 and now exports to more than 80 countries, introduced the products as part of its 2025 innovation portfolio.
The new launches—Top Fruit Açai, a concentrated paste, and Soft Açai, a powdered formulation—reflect Rubicone’s focus on health-forward, trend-driven solutions for the dessert and beverage industries. Both products are made entirely in Italy and are formulated to meet the needs of artisanal and soft serve gelato makers. Each is vegan, gluten-free, and designed to preserve the nutritional integrity of açai, a Brazilian berry celebrated for its antioxidant and detoxifying qualities.
Top Fruit Açai features a high concentration of fruit purée and is designed for ease of use across a variety of applications, including gelato, slushies, smoothies, and milkshakes. Soft Açai, offered in powder form, serves similar purposes and emphasizes versatility and convenience without sacrificing flavor or health benefits.
“At Prodotti Rubicone, we have always paid close attention to consumer trends, striving to offer our partners solutions that reflect the latest market developments. In recent years, we’ve focused in particular on functional ingredients, clean-label formulations, and unique taste experiences—without ever compromising on ease of use. Top Fruit Açai and Soft Açai are the latest results of this distinctive approach to R\&D. Açai is a major global trend, and we couldn’t miss the opportunity to include it in our portfolio,” said Alessandro Cioccolini, CEO of Prodotti Rubicone.
These product launches come as Rubicone continues to strengthen its reputation among professionals in the gelato and pastry industries. The company credits its growth to a robust research and development program and a sustained emphasis on education through initiatives such as its Gelato College, which offers practical training in gelato, pastry, and baking.
Founded in Cesena in 1959 as a small operation focused on artisanal gelato, Rubicone was an early pioneer in developing gelato bases. Since joining the Italcanditi Group in 2019, the company has expanded its catalog to more than 570 products, including vegan, high-protein, sugar-free, and gluten-free lines.
Rubicone is now part of the Ingredient-Tech Platform, a consortium of companies including CSM Ingredients, HIFOOD, Vitalfood by Italcanditi, and Comprital. The group is united by a shared mission: to advance the evolution of the food industry in ways that promote both human health and environmental sustainability.
